Smart Cocoa Pizzelle's

A twist to an old fashioned Italian recipe.


  • 2 cups almond flour

  • 3 tablespoons Smart Cocoa

  • 1/2 cup butter, melted

  • 1 teaspoon vanilla extract

  • 3 eggs

  • 2 teaspoons baking powder


Place eggs in a bowl and whisk. Add melted butter, vanilla, Smart Cocoa, almond flour and baking powder and continue to whisk until smooth. It should be a little sticky.

Heat pizzelle iron, lightly brush with oil and partition 1 tablespoon of the mixture to each circle on the iron and heat (usually about 20-30 seconds or until the steam stops coming out of the iron).

Cool pizzelle’s before storing in an air tight container.

Enjoy on their own or top with unsweetened, shredded coconut.
